The registered brand name "Pastinades" originates from the langue d'Oc verb "pastisser" which means to blend. It also echoes the southern accent of the tapenade and holds an invitation to a drink, winking at the famous Provençal pastis...
Les Pastinades are made in the Alpes de Haute Provence with almonds from the Plateau de Valensole and Provence.
 
Origins
 
The vast Plateau de Valensole is located in Haute Provence and belongs to the Parc Régional du Verdon, next to the Parc Régional du Luberon. Situated 100 km north-east of Marseilles, at a height of about 600m, it stretches out to every summit in Provence and as far as the Alps northward. An endless blue sky lavishly prevails over a land which is still dedicated to agriculture.

Ranging from the white almond blossoms that can be seen in March to the black olives picked in December, an astonishing variety of colours waves with the winds and seasons, including those of the famous lavender in summer and the unobtrusive truffles in winter. A most fascinating landscape bordering fascinating scenes!

Such a landscape inspired Les Pastinades. They were first created in 2005, wishing to combine historically produced elements such as almonds, olive oil and chickpeas. These three ingredients were to become the base of a range of 12 different products. These exclusive recipes and their original flavours evince the inventiveness of a country in perfect harmony with its cooking tradition.
